For future reference, what is the best way to destroy buildings (once you've cleared the garrison) — sending separate fleets of 27 catapults, or sending the whole lot in one go?

If you want precision go for 23 catapults in seperate fleets. If your aiming for the complete destruction of an isle then sending a large fleet with 500+ cats will do at the end of the day the same thing. I like to leave gold mine and storehouses standing so I can farm isles though.

I'm going to start sending 25 cats. I took a main house down to 2 this week with 23 cats.

i've found that the level of stone wall makes a big difference to how many cats you need, ive had a lvl 20 main house with no wall and 23 cats did 7 lvls of collateral damage. my last clearing fleet was 19 cats against a lvl 20 house with lvl 10 wall and i only took it down to 2

The carpet bombing (TM) that I came up with for scorched earth and other practices like undermining morale and such, followed this pattern with a 100% successrate - always:
1. Big clearingfleet to take out garrison, ships and level 20 wall. 2. 28 LWs, 28 cats, no soldiers targeting storehouse (order can vary) 3. idem, targetting watchtower 4. idem, targetting goldmine 5. idem, targetting barracks 6. idem, targetting main house 7. idem, targetting stonequarry 8. idem, targetting harbour 9. idem, targeting lumbermill 10. idem, targetting laboratory
Timing this was done so that all waves are mere seconds apart. The order in which you hit infrastructure can vary ofcourse, it doesn't really matter that much as the attacks are packed so closely together, but the wall first is obviously paramount. To loot the place you needed to hit storehouse next, it also impaired reconstructionwork in case you could send -due to ship or cat shortage- only two or three waves. If there was a statue and a storehouse with levels above 20 then we needed to take those out in the second and third waves instead and adjust the numbr of LWs and cats to compensate for the resilience of those specific structures. If numbers was not an issue I would do:
2. 40 LWs, 40 cats, targetting statue level 15-20 3. 40 LWs, 40 cats, targetting storehouse level 30
And then business as usual with the 28 Lws + 28 cats combos.
Soldiers were not needed as long as you kept things as close as possible together. It was quite fun actually.
