Chris has implemented the apache-level compression, and apparently the compression is somewhere around 75%, which is great I'm not too keen on going down the JS route if at all possible, although if it comes to it I may modularise MU so that there is a script I can switch on/off to write client side scripts or send the html as now. Best thing is to sort out the existing html, doing some of the things that you mention in your post (eg moving attributes to the CSS where they truly belong, removing more whitespace, etc)

I would agree with that. I have seen javascript causing problems via slight differences in the way browsers support it.

And as I mentioned earlier, client-side drawing of landcape is utterly exploitable.
Remember how much exploits were there regarding JavaScript? I'm afraid going for more JavaScript would introduce even more such exploits.
